Little Red's Jam Bars

Ingredients

1 cup Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1/2 cup salted butter, room temperature
1 cup packed brown sugar
1 egg, room temperature
1 Tbsp. pure vanilla
1/4 tsp. salt
1/3 cup Berry Jam, any kind
dash of pink sea salt
Little Red's Berry Jam Ingredients

4 cups berries
4 cups sugar

Directions

  1. Preheat oven to 350° F.
  2. Blend butter until its smooth and creamy. Add in brown sugar and salt. Add vanilla and egg. Blend until well mixed and add flour.
  3. Pat mixture into a buttered 8x8 pan and swirl jam on top to make a marbled effect.
  4. Bake for 25-30 minutes. Sprinkle with sea salt immediately upon removing from oven. Allow to cool before cutting.
  5. To make Little Red's Berry Jam: Place the berries in a stainless steel pot and bring to a full boil over high heat until the berries reduce and there aren't any large lumps left. Don't bother with adding water while boiling, as the berries have plenty of moisture themselves but be sure to stir consistently. Measure out the sugar and add it to the berries in a steady stream. Keep stirring until sugar is dissolved.
  6. Bring the mixture to a rolling, bubbling boil on the highest heat. Add a thermometer, if you have one, to ensure that the temperature is as far above boiling point as possible. Some cooking thermometers have a "jam" marking. Remove the berry sauce from the heat. Allow to cool for 10 minutes. Pour the cooked berry mix into your hot sterilized jars.
