Peach Streusel Scones

Ingredients

1 pkg Namaste Muffin & Scone Mix
1/4 teaspoon cinnamon
1/8 teaspoon ground ginger
1/4 cup butter (cold)
2 eggs
1/3 cup milk, any kind
1 cup finely diced fresh peaches
• Streusel Topping
1/3 cup brown sugar
1 teaspoon cinnamon
1/4 cup butter, melted

Directions

  1. Preheat oven to 400°F. Line cookie sheet with parchment paper.
  2. Combine Muffin Mix with ground cinnamon and ginger. Cut in cold butter using pastry cutter until it is a finely crumbed texture.
  3. Mix together the eggs and milk and add to muffin mixture. Stir until just combined. Fold in the fresh peaches.
  4. Mix together the eggs and milk and add to muffin mixture. Stir until just combined. Fold in Using your hands – shape into (8) round disks. Keep in mind they will spread so leave lots of space in between.
  5. Sprinkle each disk with a little bit of the Streusel Topping Mix.
  6. Bake for 12-15 minutes or until a little golden brown. Sprinkle more of the topping while they’re still warm if desired.
  7. Let cool completely. I use a pizza cutter to cut my scones.

Variations

  • If you wish garnish with a confectioner’s sugar glaze.
  • I use a mixture of coconut yogurt and honey instead – Enjoy!
