Backpack Bars


¾ cup Namaste Foods Perfect Flour Blend
½ cup uncooked quick cooking oats
½ cup softened butter or oil
¼ cup flax seed (crushed)
1 Tbsp grated orange rind
½ cup brown sugar
2 eggs
¼ cup brown sugar
4 oz sliced almonds
½ cup shredded coconut
½ cup dried cranberries
½ cup raisins


  1. Heat oven to 350° F.
  2. In a large bowl, mix Perfect Flour, oats, butter or oil, flax seed and orange rind on low speed. Add ½ cup brown sugar and blend together on medium speed for 2 minutes. Mixture will look dry. Pat into 8 x 8 lightly greased or sprayed pan.
  3. In a small bowl beat 2 eggs with ¼ cup brown sugar and stir in almonds, coconut, cranberries and raisins. Pour evenly over mixture in pan.
  4. Bake for 30-35 minutes or until toothpick inserted in center comes out clean.
  5. Cool on a wire rack and cut into 12 pieces.
