Hearty Minestrone Soup
Ingredients1 package Namaste Pasta Pisavera Dinner
3 tbsp. extra virgin olive oil
2 tbsp. fresh garlic, chopped
8 cups water
½ onion, diced
1 stalk celery, diced
1 medium carrot, diced
1 small zucchini, diced
5-6 mushrooms, sliced
½ cup red wine (optional)
1 (8 oz.) can tomato sauce
1 package Pasta Pisavera seasoning
2 (14.5 oz.) cans diced tomatoes with juice
1 (15 oz.) can kidney or white beans (drained)
2 tbsp. balsamic or red wine vinegar
½ tsp. dry red pepper flakes (optional)
- Heat oil in a 4-6 qt. soup pot. Sauté garlic, onions, celery and carrot over medium heat until vegetable are soft, about 10-12 minutes. Do not brown. Add wine and Pasta Pisavera seasoning packet. Cook for 7-8 minutes until wine has nearly evaporated.
- Add zucchini, mushrooms, pepper flakes, tomato sauce, diced tomatoes, beans and water. Bring to boil and add pasta. Boil for 7-10 minutes until pasta is tender, stirring occasionally. Turn heat to low and stir in vinegar and seasonings. Serve immediately with Garlic Fry Bread.
- Add 1 pound cooked ground beef or ground turkey or 1-2 cups cooked, chopped chicken breast.
