Johnny Cakes with Blueberries
Ingredients1½ cups Namaste Foods Waffle and Pancake Mix
¾ cup water
¾ cup oil
1 tbsp. sugar
1 tbsp. cornmeal
½ cup blueberries, fresh or frozen (thawed)
- Combine all ingredients and mix well. Pour onto preheated, sprayed pan or griddle. Makes about 9 - 4 inch Johnny Cakes. As with all pancakes, may need to add more liquid to batter as it sits and absorbs moisture.
- Top with butter, blueberries, and a dollop of whipped cream if desired.
- Recipe fact: This thin cornmeal pancake is a New England Tradition.
- Recipe variation: Fresh raspberries or strawberries would be great, too!
