Pineapple Upside Down Cake


1 package Namaste Foods Vanilla Cake Mix
20 oz can pineapple chunks or slices (reserve the liquid}
3 eggs
1/2 cup butter, melted or 1/2 cup oil 
1/2 cup maraschino cherries (optional)
1 cup reserved pineapple juice (add water if needed)
1/2 cup oil
1 1/2 cups brown sugar
3/4 cup pecan pieces (optional


  1. Heat oven to 350° F. Spread 1/2 cup melted butter or oil over the bottom and sides of a 9x13 pan. Spoon in brown sugar and spread it evenly over the bottom of the pan. Drain pineapple, reserving liquid, and arrange pineapple and cherries (if using) on bottom of pan. (Sprinkle on pecan pieces if desired).
  2. Combine eggs, 1/2 cup oil and pineapple juice (if juice didn't equal one cup, add water.) Add cake mix and blend. Pour cake batter over the pineapple and spread evenly.
  3. Bake for approximately 45-50 minutes. Let cool 1 minute, then carefully invert cake onto serving platter. Let cool completely. Do not let cake sit too long before inverting or it will stick.
