1/3 cup brown sugar
1 teaspoon ground cinnamon
¼ cup of melted butter
1 package Namaste Foods Muffin & Scone Mix
¼ teaspoon ground cinnamon
1/8 teaspoon ground ginger
½ cup butter (cold)
1/3 cup milk, any kind
1 cup finely diced fresh peaches
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
In separate small bowl, combine topping ingredients. Set aside.
Combine Muffin Mix with ground cinnamon and ginger. Cut in cold butter using pastry cutter until it is a finely crumbed texture.
Mix together the eggs and milk and add to muffin mixture. Stir until just combined. Fold in the fresh peaches.
Using your hands – shape into (8) round disks. Keep in mind they will spread so leave lots of space in between.
Sprinkle each disk with a little bit of the Brown Sugar Topping Mix.
Bake for 12-15 Minutes or until a little golden brown.
Sprinkle more of the Brown Sugar Topping while they’re still warm if desired.
Let cool completely. She uses a pizza cutter to cut her scones. If you wish, garnish with a confectioner’s sugar glaze. She uses a mixture of coconut yogurt and honey instead – Enjoy!
