Mango Cake


1 pkg. Namaste Foods Vanilla Cake Mix 
1 cup mango purée *
1/4 cup water
3 eggs
1/4 cup oil ( coconut oil is nice if you have it )
1/2 cup diced mango


  1. Preheat oven to 350° F. Combine all ingredients in a bowl and blend well. Pour batter into sprayed or greased pans. Two rounds will cook in about 25 minutes, cupcakes in about 15-18 minutes and a 9x13 pan in 35-40 minutes. Cake is done when toothpick inserted comes out clean. Frost with cream cheese frosting or fresh whipped cream and top with more fresh mango, raspberries or toasted coconut.
  2. * To make mango purée, place canned mango with the juice in a food processor and blend until smooth. If using fresh mango, put 1 cup of chopped mango and 1 tbsp. water in a food processor and blend well.


  • This cake is a wonderful way to sneak a little added nutrition and pizzaz into dessert. You can substitute apricot or peach for the mango if you prefer.
