Ingredients1 package Namaste Foods Pasta Pisavera Pasta Dinner
14 oz. can diced tomatoes, undrained
5 oz. can tomato sauce
10 oz. package frozen cauliflower, thawed and drained
1 bay leaf
2 tbsp. olive oil
2-3 cloves garlic, chopped
1 small onion, finely chopped
2-3 tbsp. chopped fresh oregano or parsley
½ cup sliced black olives
- Cook the pasta according to the package directions. Drain, rinse in cool water and set aside.
- While pasta is cooking, saute onion, garlic and olive oil in small saute pan until onions are translucent; 6-8 minutes. Combine tomatoes, bay leaf and tomato sauce in large sauce pan. Add sauteed mixture. Let simmer about 10 minutes. Add cauliflower, heat thoroughly.
- Add oregano and black olives just before serving. Top hot pasta with sauce and parmesan cheese if desired.
- For a little extra protein, add 1 can drained tuna or 1 cup chopped, cooked chicken or turkey.
