Cheesy Baked Pasta with Spinach and Artichokes
Ingredients1 pkg Namaste Foods Say Cheez Pasta Dinner
14 oz. can (or 1 ½ cups) marinated artichoke hearts, rinsed & quartered
9-10 oz package frozen spinach, thawed and drained
2 cups shredded mozzarella cheese (8 ounces)
1 cup sour cream or yogurt (or ½ cup mayonnaise, ½ cup sour cream or yogurt) May also use soy yogurt or Silk tofu
½ cup sliced black olives
¼ tsp black pepper – more or less to taste
1 oz grated Parmesan cheese
- Cook the pasta according to the package directions, drain, and set aside. Heat broiler.
- Combine sour cream or yogurt, artichoke hearts, spinach, Say Cheez seasoning packet (more or less to taste), half the mozzarella, and pepper in saucepan on medium heat until warm and bubbly. Add pasta and toss.
- Spray 9”-10” pie pan with non-stick vegetable spray. Transfer mixture to pan and sprinkle with the remaining mozzarella and Parmesan cheese on top. Broil until the cheese is browned in spots, 2 to 3 minutes.
- Optional: Add cooked, chopped ham, chicken or turkey to step 2. Soy cheeses may be substituted for dairy cheeses.
