Suzy’s Easy Cranberry Pie
1 package Namaste Foods Cookie Mix
3 egg whites
½ cup butter, melted
¼ cup melted shortening or canola oil
½ cup sugar
½ - ¾ cup chopped walnuts or pecans (optional)
2 cups fresh or frozen whole cranberries
1/3 - 1/2 cup sugar (to taste)
- Preheat oven to 325° F.
- Grease 10” pie plate. Spread cranberries in the bottom then sprinkle evenly with the sugar and the nuts.
- Beat the egg whites well. Add the melted butter and shortening or oil. Beat well. Add the Cookie mix and beat well. Pour over the cranberry and nut mixture.
- Bake for approximately 45 minutes or until crust is golden brown. Cut in wedges.
- Serving Suggestion: Can be served warm or cold. Especially delicious with whipped cream or ice cream on top. You can even add some finely grated orange zest on top!
