Italian Pea and Pasta Salad
Ingredients1 Pkg Namaste Foods Pasta Pisavera Dinner
1 pkg 10-12 oz frozen peas
1/4 cup finely chopped fresh flat leaf parsley
2 tbsp. chopped fresh chives
1 tsp. chopped fresh mint
3 garlic cloves, minced
5 tbsp. fresh lemon juice (from 2 large lemons)
1 1/2 cups halved cherry or grape tomatoes
2 tbsp. extra-virgin olive oil
- Follow package directions for boiling pasta until it is done but still firm. Drain in colander, rinse with cool water and drain again.
- In a large serving bowl combine the peas, herbs, garlic, lemon juice and pasta seasoning (to taste). Gently fold in pasta. Add cherry tomatoes, drizzle with olive oil and toss gently. Add salt & pepper to taste.
- Be sure to use fresh, bright herbs for a wonderfully colorful salad.
