Easy Banana-Walnut Muffins

Ingredients

2 cups Namaste Perfect Flour Blend
1/2 cup packed light or dark brown sugar
3/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 tsp. vanilla extract
1-1/2 cups mashed ripe banana (about 3)
1/4 cup honey
2 large eggs
1/2 cup chopped walnuts (optional)
1/2 cup vegetable oil

Directions

  1. Preheat oven to 350 degrees F. Lightly grease mini muffin pan.
  2. Beat together the oil, sugar, baking soda, salt, cinnamon, nutmeg and vanilla in a medium bowl until smooth. Add the bananas, honey and eggs, beating until smooth. Add the flour and continue beating until well blended. Stir in nuts.
  3. Spoon the batter into the prepared pan, and bake for approximately 20 minutes.

Variations

  • Substitute the walnuts for blueberries or mini chocolate chips!
